Sambal bajak is a cooked Indonesian chilli paste with roots in the agricultural communities of Central and East Java. The name translates to "ploughman's sambal" — a reference to its origins as a substantial, shelf-stable condiment made for long days of physical work. Unlike fresher sambals, bajak is slow-cooked until the oils rise to the surface, which naturally preserves it and deepens its flavour.
